Banana Buckwheat Sandwiches
Despite the fact that they're very sweet, these sandwiches are pretty healthy. Instead of white, refined flour, I used whole buckwheat flour and most of the sugars present in this recipe come from the natural sugars in the banana and Stevia which has 0 calories and is actually the healthiest alternative sweetener on the market. Contrary to aspartame for example, an alternative sweetener known to be waistline-friendly but linked to premature dementia, Stevia, as far as current scientific research shows, does not have any negative side effects. The only unhealthy sugars in these sandwiches come from a thin layer of jam.
I always use silicone molds to bake my muffins, breads, egg muffins etc. because that way I save money on baking paper and the food doesn't stick to the molds at all. I never have to grease my molds with oil which also saves me A LOT of calories! Because silicone molds are flexible, you can just 'pop' your muffins or whatever it is you're baking, out of the molds without damaging the muffins! If you don't have silicone forms, I suggest you try it because it has been a game changer for me, they're not expensive at all and there are a lot of original molds out there which allow you to make the coolest baking goods ever! This is what you need:
- 40 g Stevia
- 78 g whole buckwheat flour (where to buy whole buckwheat flour)
- 8 g baking powder
- 2 bananas
- 4 ml liquid vanilla aroma (or liquid vanilla extract)
- a jar of vegan strawberry jam (or any other jam of your choice)
This is how you make it:
- Mash the bananas
- In a large mixing bowl, mix the buckwheat flour, the Stevia, the bananas, the baking powder and the vanilla aroma with a fork until you get a runny batter.
- Take the molds you want to use. Using a spoon, pour a bit of the dough into the molds until the bottom is completely covered. Now cover the dough with a thin layer of jam. Now you can fill the rest of your mold with the dough. Make sure not to fill the molds completely to the top because the dough will rise in the oven.
- Put the molds on a baking tray and let them bake for 30 minutes in a preheated oven at 170 °C or 338 °F. You can also choose to make a big bread in a bread mold or big cake mold. In that case you should bake it for 1h30m at 170 °C or 338 °F.
- When it's time, take the sandwiches out of the oven and let them cool completely. When they've cooled completely, you can take them out of the molds easily. In the fridge, they will last another 3 days.
